Sallie poepsel, MS CRNA, Nurse Anesthetists, will be joining Dr. Tobler on Tuesday, January 17th. in celebration of Nurse Anesthetists Week come January 22-28, 2012. The interview topic is about nurse anesthetists and their vital role in providing anesthesia services to medically underserved areas, especially to rural Missourians. Sallie splits her time between urban practice and rural anesthesia practice.

2 lbs boneless chicken breasts, 2 egg whites, 1/4 c olive oil, 1/2 c parmesan, 1/2 c bread crumbs, seasoning of your choice, 1 1/2 c chicken broth, 2/3 c cheap white wine
Whip egg whites with a fork in one bowl, then combine parmesan and bread crumbs in another, coat chicken w/egg white, then with crumb mixture and a sprinkiling of seasoning of your choice.Heat up skillet with olive oil and sear chicken-breasts do not have to be totally cooked. Arrange breasts in cooking pan for oven, pour mixture of chicken broth, white wine and remaining olive oil from pan over breasts. Take remaining cheese and bread crumbs and sprinkle over mixture. Put pan in oven for 1 hour at 350 degrees, watch cheese "sprinkles" for browning, put aluminum foil on top of pan if becoming too brown.
FRUIT SMOOTHIE
1 cup fresh or frozen fruit (strawberries, raspberries, blueberries or frozen peaches), 1 scoop of protein powder (preferable whey or soy), 8 oz. plain filtered water, diet sweetener to taste, 1 Tbs. Extra Virgin Olive Oil or Flaxseed Oil. Place all in blender & blend until rich and creamy, approx 2-3 minutes. Makes 1 serving.
